Recipe Ingredients:
  • 400g flour
  • 1/2-teaspoon salt

  • 225g unsalted butter, room temperature
  • 200 g granulated white sugar

Royal Icing:
  • 2 large egg whites
  • 2 teaspoons fresh lemon juice
  • 3 cups icing sugar, sifted
Recipe Method:
Sieve together the flour, salt, and baking soda thrice. Beat the butter and sugar until light and fluffy (about 3 minutes) with an electric beater. Add the eggs and vanilla extract and beat until combined. Add the flour mixture and beat well until you have a smooth dough. Divide the dough in half and wrap each half in plastic wrap. Refrigerate for about one hour or until firm enough to roll.
Preheat oven to 180 degrees C and place rack in center of oven. Line two baking sheets with parchment paper. Remove one half of the chilled dough from the refrigerator and, on a lightly floured surface, roll out the dough to a thickness of 1 cm. Keep turning the dough as you roll, making sure the dough does not stick to the counter.
Cut out desired shapes using a lightly floured cookie cutter and transfer cookies to baking sheet. Place the baking sheets with the unbaked cookies in the refrigerator for about 15 minutes to chill the dough which prevents the cookies from spreading and losing their shape while baking. Bake cookies for about 8-10 minutes (depending on size) or until the edges are just starting to brown. Remove from oven and let cookies cool on baking sheet for a few minutes before transferring to a wire rack to finish cooling. Frost with royal icing, if desired. Be sure to let the royal icing dry completely before storing.
For Royal Icing with Egg Whites: In the bowl of your electric mixer (or with a hand mixer), beat the egg whites with the lemon juice. Add the sifted sugar and beat on low speed until smooth. If necessary, to get the right consistency, add more sugar or water. Add food coloring, if desired. The icing needs to be used immediately or put in an airtight container as it hardens when exposed to air. Sprinkle colored sprinklers onto wet icing if desired.

2. Add chicken to the mixture bowl and let it marinate for atleast 2 hours or preferably overnight.
3. Set the oven at 500°F. Take half a tablespoon of cooking oil and spread it over the wire rack. Place the chicken on the foil and then over the rack.
4. Roast the chicken until nicely browned for around 25 to 25 minutes. Serve right away. Your healthy tandoori chicken dinner is ready!

Steps to prepare Grilled salmon with broad beans


Ingredients:

  • 4X100g fillets of salmon
  • 200g broad beans
  • 4 ciabatta bread
  • 20ml lemon juice
  • 10ml vegetable oil
  • For the dressing
  • 20ml olive oil
  • 20ml lemon juice

Method:

  1. -Heat a griddle-pan until it begins to smoke a little. Drizzle the cibatta with half the oil and cook on the girdle for a few minutes on each side the bread is lightly tasted.
  2. -Squeeze the lemon juice over the salmon and season slightly with salt and coarsely ground pepper. Heat the remaining oil in a pan. Add the salmon and cook for 4-6 minutes on each side.
  3. -String the broad beans and put in a pan. Cover with just enough water and a pinch of salt. Bring to a boil and simmer for 4 minutes. They should be crunchy. Drain.
  4. -Mix the olive oil and lemon juice. Whisk well.
  5. -Pile the broad beans on a plate and top with the salmon. Pour a little dressing over it and serve.

Ingredients:

  • 1 onion, sliced
  • 1 red and 1 green pepper, de-seeded and sliced
  • 50g chorizo, sliced

Method:
Boil the kettle. Heat the oil in a non-stick frying or shallow pan with a lid, fry the onion, peppers, chorizo and garlic in the oil over a high heat for 3 minutes. Stir in the rice and chopped tomatoes. Stir for 2-3 minutes till the rice is well coated. Add 500ml boiling water, cover, then cook over a high heat for 12 minutes. Uncover, then stir - the rice should be almost tender, stir in the prawns, with a splash more water if the rice is looking dry, then cook for another min until the prawns are just pink and the rice tender.

  • 1 teaspoon vanilla extract
  • ½ tsp baking powder
  • cupcake liners
  • For the frosting:
  • 125g butter (unsalted)
  • 300g icing sugar
  • ½ tsp Vanilla essence

Method:

  1. Preheat oven to 180 degrees C. Line cupcake tins with liners. Place a regular size Oreo cookie in the bottom of each liner.
  2. Sift together the baking powder and the flour. Cream together the butter and the icing sugar till pale and fluffy. Add eggs, one at a time, till the mixture is smooth. If it starts to curdle, add 1tbsp flour to it and mix well. Add the vanilla extract and mix. Add the flour a little at a time and mix well. Do not over beat. Take 1/2 of remaining cookies and chop coarsely and add to cake mix. Fill the cupcake tins. Bake for 15 minutes or till a skewer inserted in the cup cakes comes out clean. While cupcakes are baking make the frosting.
  3. Cream together butter, vanilla extract and icing sugar. Chop remaining regular-sized Oreos very fine (you can put the cookies in the food processor instead of trying to chop them up super fine). Add to frosting. After cupcakes have cooled frost the cup cakes and decorate with Mini Oreos.

Steps to prepare spicy Mutton Cutlets




Ingredients:
  • Bread
  • Milk
  • Worcestershire sauce
  •  Mutton Mince
  • onions 
  • coriander leaves
  • chopped green chill
  • turmeric powder
  • garam masala Powder 
  • salt
  • oil
  • Ginger paste
Method of Preparation:
  1. In a bowl take 1 slice stale bread, milk (1/2cup), and tomato ketchup (1sp), Worcestershire sauce (1sp), fine Mutton Mince (250g), ginger-garlic paste (1sp), crushed browned onions (1sp), coriander leaves (1sp), chopped green chilly (1sp), turmeric powder (1/4sp), garam masala Powder (1/2sp), salt to taste. Mix all of them well using oil (1 tbsp). Keep it aside for 15 minutes.
  2. Take small amount of mixture in to hand and shape the mixture into round thick cutlets and smear oil on both sides of each cutlet.
  3. Take pan heat oil (5sp); fry the cutlets on both sides or else can deep fry them.
  4. Serve hot with potato chips and tomato sauce.

Steps to prepare Chicken Quesadilla


Ingredients
•cooked and shredded chicken-1 cup
•Tortillas-4
•Red bell pepper-1 medium
•Yellow bell pepper-1 medium
•Green capsicum -1 medium
•Onion-1 medium
•Oil,+ for shallow frying-1 tablespoon
•Black pepper powder a pinch
•Cajun Spice-1 teaspoon
•Salt to taste
•Processed cheese-40 gms
•Fresh coriander sprigs for garnish
Mango Salsa
•Ripe mango,cut into dices-1
•Tomato,chopped 1 small
•Green chillies,finely chopped-1 teaspoon
•Cajun Spice-1 teaspoon
•Crushed black peppercorns-1/2 teaspoon
•Salt to taste
•Roasted cumin powder-1/2 teaspoon
•mango juice-4 tablespoons
Juice of ½ lemon
•Avocado-1 small
Method
1.Deseed and cut the bell peppers and capsicum into juliennes. Slice onion.
2.Heat 1 tbsp oil in anon-stick pan. Add all bell peppers, capsicum, onion, pepper powder, Cajun spice and salt. Toss to mix and sauté for 1 minute.
3.Add shredded chicken, toss and cook for 1 minute. Switch off heat.
4.To make mango salsa, combine mango, tomato, green chillies, Cajun spice, crushed peppercorns, salt, cumin powder, mango juice and lemon juice in a bowl. Mix well.
5.Halve the avocado and discard the seed. Clean it from centre, peel, roughly chop and add in the bowl. Mix well and set aside.
6.Heat tortillas lightly. Place a tortilla on a worktop and put generous amount of cooked chicken mixture on one side. Grate 10 grams processed cheese on top and fold into a half moon. Similarly assemble the remaining quesadillas.
