Steps to prepare Chicken Quesadilla


Ingredients
•cooked and shredded chicken-1 cup
•Tortillas-4
•Red bell pepper-1 medium
•Yellow bell pepper-1 medium
•Green capsicum -1 medium
•Onion-1 medium
•Oil,+ for shallow frying-1 tablespoon
•Black pepper powder a pinch
•Cajun Spice-1 teaspoon
•Salt to taste
•Processed cheese-40 gms
•Fresh coriander sprigs for garnish
Mango Salsa
•Ripe mango,cut into dices-1
•Tomato,chopped 1 small
•Green chillies,finely chopped-1 teaspoon
•Cajun Spice-1 teaspoon
•Crushed black peppercorns-1/2 teaspoon
•Salt to taste
•Roasted cumin powder-1/2 teaspoon
•mango juice-4 tablespoons
Juice of ½ lemon
•Avocado-1 small
Method
1.Deseed and cut the bell peppers and capsicum into juliennes. Slice onion.
2.Heat 1 tbsp oil in anon-stick pan. Add all bell peppers, capsicum, onion, pepper powder, Cajun spice and salt. Toss to mix and sauté for 1 minute.
3.Add shredded chicken, toss and cook for 1 minute. Switch off heat.
4.To make mango salsa, combine mango, tomato, green chillies, Cajun spice, crushed peppercorns, salt, cumin powder, mango juice and lemon juice in a bowl. Mix well.
5.Halve the avocado and discard the seed. Clean it from centre, peel, roughly chop and add in the bowl. Mix well and set aside.
6.Heat tortillas lightly. Place a tortilla on a worktop and put generous amount of cooked chicken mixture on one side. Grate 10 grams processed cheese on top and fold into a half moon. Similarly assemble the remaining quesadillas.

Steps to prepare Espresso Chocolate Shortbread Cookies


Ingredients

  • Instant coffee powder  
  • Boiling water  
  • Butter  
  • Confectioners' sugar  
  • Vanilla extract  
  • All purpose flour  
  • Mini chocolate chips  
  • Salt  

Method

  1. In a small bowl, mix the hot boiling water with instant coffee powder. Mix well and set aside to cool.
  2. In a large bowl, beat the butter and powdered sugar for 3 minutes or until the mixture is smooth. Add vanilla extract and espresso mixture and beat till well combined.
  3. Add the flour and on low speed beat till there is no trace of flour. Do not over mix it. Using a spatula, fold in the mini chocolate chips.
  4. Transfer the soft dough to a large zipper-lock bag. Place the bag on your work surface and do not seal the bag. Take a rolling pin and roll the dough into a large rectangle (9"X10 1/2") thats 1/4" thick. Seal the bag while pressing out as much air as possible and refrigerate the dough for at least 2 hrs or for up to 2 days.
  5. Preheat oven to 160C and place the rack in the middle of the oven. Line two baking sheets with parchment or aluminum foil.
  6. Remove the zipper lock bag from the fridge and place on a cutting board and slit it open. Turn the firm dough out onto the board and cut out any shape of your choice using a cookie cutter or use a knife to cut into squares. Transfer the unbaked cookies to the baking sheets and bake them for 20 mts The shortbreads will not change much color and will appear pale. Transfer the cookies to a cooking rack and bring them to room temperature before serving.

Steps to prepare spicy Prawn Fry


Ingredients

  • Prawns 
  • Onions 
  • Garlic
  • Ginger green chili paste 
  • Red chilli powder
  • Turmeric powder
  • Coriander powder
  • Saunf powder
  • Kasuri methi (optional)
  • Coconut 
  • Garam masala powder
  • Lemon juice OR curd/yogurt 
  • Salt
  • Curry leaves
  • Cooking oil

Method

  1. Marinate the prawns in ginger green chili paste, 3/4 tsp chilli pwd, turmeric pwd, lemon juice and salt for 10 mts.
  2. Add 1/4 cup of water to the marinated prawns and bring to a boil, reduce to medium flame cook for 6-8 mts. Turn off heat and drain the excess water, if any.
  3. Heat oil in a pan, add the finely minced garlic and saute for half a mt. Add sliced onions, kasuri methi and curry leaves and saute till the onions turn a light caramlized brown, approx 7-8 mts.
  4. Add the cooked prawns,1/4 tsp chili pwd, saunf pwd, coriander pwd and garam masala pwd and stir fry for 3 mts. Add the grated coconut and saute for 3 mts. Adjust salt and turn off heat. Serve hot as a starter or as a stir fry with rice.

Ingredients

  • chicken 
  • jeera 
  • mustard seeds
  • onions
  • turmeric
  • curry leaves
  • ginger-garlic paste

Method of Preparation:

  1. Clean the chicken and cut it into small size.
  2. Heat oil in a pan add jeera and mustard seeds.
  3. Add chopped onions, turmeric, curry leaves and ginger-garlic paste.
  4. Now add chicken pieces in it and fry them by stirring until they turn lightly brown in color for 5min.
  5. Then add chopped tomatoes and cook for 10mins add chilli powder, salt.
  6. Add water (as required) and garam masala and spices powder cook for 10min.
  7. Garnish with coriander leaves and serve.

  • Basmati rice (can use any rice)

  1. Boil basmati rice (4 cups).
  2. Heat olive oil (2 sp) and sesame oil in a pan; fry beaten eggs (3) and then boiled beans (1 cup), grated cabbage (1cup) and carrot pieces (1 cup).
  3. Once the veggies are nice and golden, add sliced fried chicken. Fry until it golden brown.
  4. To this add soya sauce (1sp), tomato sauce (1sp) and chilly sauce (1sp) mix well and finally add the cooked rice, salt (1sp) and red chilly powder (2sp). Stir well.

Steps to prepare Spicy Chicken Tikka


Ingredients:
  • chicken 
  • yogurt 
  • crushed cloves
  • ginger-garlic paste
  • Red chilli powder
  • coriander powder
  • red food color

Method of Preparation:
  1. Cut the chicken (250 g) into 1 inch cube pieces
  2. Take the yogurt (1/4 cup), crushed cloves and ginger-garlic paste (1sp), red chili powder (2 sp), coriander powder (1/2 sp), red food color and salt (1sp) and combine them in the bowl and keep aside.
  3. Now add the mixture to the chicken. Mix it well, cover and chill it for 4-5hr.
  4. Heat broiler and put chicken in the skewers or in the broiler and grill it for 5-8 minutes, turning occasionally so that chicken is cooked properly.
  5. Now garnish the chicken with rings of onions (thinly sliced into rings), tomatoes and coriander leaves.

Steps to prepare spicy Chilli chicken



Ingredients:
  • chicken 
  • ginger garlic paste
  • turmeric  
  • chilli powder
  •  salt 
  •  oil 
  •  onion 
  • capsicum 
  • tomatoes 
  • garam masala powder
Method of Preparation:
  • Take medium sized chicken (500g) pieces into a bowl; add ginger garlic paste (2sp), turmeric (1/2sp) then add chilli powder (2sp), coriander powder (1/2sp), green chilly (2sp), and salt (1sp). Marinate this for 30 min.
  • Heat oil (2sp) in a pan; add onion shells (1/2 cup) fry for 1min and add the ginger garlic paste (1sp), mint leaves fry for 2min and add capsicum shells (1/2cup) finely chopped tomatoes (1/2cup) and coriander leaves (2sp). Cock this for 5min on low flame.
  • To this now add the marinated chicken pieces. Cook for 5 min on high flame with continuous stirring.
  • Add the freshly prepared garam masala powder (1sp) to the chicken and add small quantity of water and simmer till chicken is tender. Add oil (2sp) over the tender chicken and stir fry until each pieces looks separate.
  • Take the chilly chicken into a serving plate and garnish with coriander leaves, onions slices, tomato slices, capsicum slices. Serve hot.
